CRUNCHY RICE PAPER DUMPLINGS
This will become your new favorite recipe. It went viral on TikTok and I had to try it too. Super simple, but so good and crunchy.
- 2 carrots
- 1/4 cabbage
- 2 spring onions
- 12 sheets of rice paper
- 3 tablespoons of soy sauce
- 1 teaspoon of sesame seeds
- 3 tablespoons of extra virgin olive oil, salt and pepper (to taste)
(for 6 dumplings)
Step 1. Wash and thinly slice the vegetables. Then in a pan, over medium heat, cook them with olive oil for about 10-15 minutes.
Step 2. In a dish with water, insert the rice paper and turn it carefully until the rice paper is wet (don't leave it in the water for too long). Then, add a spoonful of cooked vegetables - fold over with rice paper and fold again over another rice paper. Repeat the process for each bundle.
Step 3. In a medium sized frying pan, with olive oil over medium heat, cook the vegetable dumplings for about 2 minutes (per side). They are ready when they are golden brown.
Step 4. Serve with soy sauce and sesame seeds.
