COLD COLLAR AND CHICKEN SALAD
Not all salads have to be boring! This curly kale and chicken will blow your mind and it's really easy to prepare.
- 8 chicken wings
- 100 g curly cabbage
- 1 avocado
- 1 tablespoon of smoked paprika
- 3 tablespoons of extra virgin olive oil
- 1 cucumber
- half a lemon
- salt and pepper to taste
- optional: 2 tablespoons fried onions
(for 2 or 3 people)
Step 1. Preheat the oven to 220C.
Step 2. In a bowl, add wings (previously dried) and combine smoked paprika, salt, pepper and 1 tablespoon olive oil.
Step 3. Place the wings on a foil-lined baking sheet and bake for about 20 minutes (or until crisp and golden brown).
Step 4. Meanwhile, in a small bowl or mixer, add the avocado, olive oil, lemon juice, salt and pepper. Mix until you get a smooth and creamy mixture.
Step 5. Rinse and cut the kale (remove the rib). Cut the cucumber into thin slices. Add the cabbage and cucumber to a bowl with the avocado salsa. Mix until well combined.
Step 6. Finally, add the fried onions (if desired) and the chicken wings to the salad bowl.
Step 7. Enjoy your meal!
