HOW TO PREPARE PISTACHIO BUTTER
This recipe contains only natural pistachios; does not contain salt, sugar, food coloring or other ingredients.
- 200 g of pistachios
1: Bring a saucepan of water to the boil, then add the pistachios for just 1 minute. Immediately drain into an ice bath to "shock" them and stop the cooking process. An ice bath is a bowl filled with cold water and ice cubes.
2: Drain the pistachios, remove all ice cubes and press them between your fingers or use your fingernails to remove the skins. This is an easy process.
3: Add all of the peeled pistachios to a high speed blender or food processor and blend until paste consistency. Scrape the sides frequently.
4: Store in an airtight container in the refrigerator.
